What food would you say is your specialty?
When the children were all young, they and my wife were eligible (all at once) for WIC. That is the Women, Infant, and Children food program. We got, among other things, 18 eggs every week. That was way more than we could eat fried or scrambled. Since necessity is the mother of invention it fell on me to devize a way to use all those eggs. I created a recipe for pancakes to use our excess. It called for 6 eggs every batch so I needed to make it twice a week. The boys loved them and they became a staple in the house even after the immediate need for them had passed. I still have the recipe and make it once in a while if only for the sake of nostalgia since the boys are completely sick of them. They are to this day the most awesome food I have created.
